High-green, brown-green plant, using thread-like shoots with a slightly bitter taste that are collected, washed, blanched in oil, vinegar, white wine, aromas, salt and sugar and potted with the cooking liquid. The Alpine Cicerbita is a "protected" plant whose harvest is allowed only for limited quantities; for this reason the product is very rare and is reserved, by the local populations, as a delicacy to be consumed with "friends".
